I got myself a wee present for Christmas – the recipe book Lean in 15 from ‘The Body Coach’. There’s a lot of hype around this book so I thought I’d give some of its recipes a wee go. So far, the clear winner is this chicken pie recipe which is so so easy to make but also just so yummy, especially now that its absolutely freezing!
You will need:
- 4 chicken/ Quorn Fillets
- 250ml chicken stock
- 100ml double cream
- 2 leeks
- 7 mushrooms
- A big handful of spinach
- Filo pastry sheets
- A glug of oil
Preheat your oven to 190.
Start by chopping your leeks and mushrooms- all of these measurements are changeable so if you’re a huge fan of mushrooms chuck in as many as you want.
Once this is done, fry them off in a pan for a couple of minutes. While that’s happening, cut up your chicken or Quorn into small chunks and chuck it in the pan with the veg.
Fry this for another couple of minutes- the chicken won’t be cooked at this point so don’t panic! Then add in your stock and cream. If it’s a wee bit watery then add a bit of cornflour or regular flour into a separate bowl and mix with 2 tbsp water until smooth, then chuck into the mixture.
Let this bubble down for about 10 minutes until the sauce has thickened a wee bit. Then chuck it into an ovenproof dish and make sure the mixture is roughly level.
Now it’s time for the fun bit. Separate about 6 or 7 filo pastry sheets and then scrunch them all separately. Pop them on top of the mixture, making sure not to leave any gaps.
Drizzle a wee bit of oil on top of your pie and chuck it in the oven for 20 minutes.
Voila! A tasty and warming wee treat for you and your flatmates. Super yummy and really not impossible to make!
