New year, new start right? We’re all inundated with healthy eating tips in January and quite frankly, it’s boring.
I promise I’m not jumping on the bandwagon BUT I bagged myself a wee handheld spiraliser for Christmas and just had to give it a go. To be honest, I wasn’t convinced that ‘courgetti’ was going to be for me. What person in their right mind could think that it could substitute real pasta?
You will need:
- A touch of oil
- 2 chicken breasts/ Quorn fillets
- A tub of pesto (if you’re feeling adventurous feel free to make your own)
- Some black olives
- A red onion
- A courgette
- Salt and pepper
- A spiraliser (you can get super cheap ones online)
With these few ingredients you can make one of the tastiest meals ever, PLUS there’s no agonising wait for the pasta to boil.
Preheat your oven to around 180.
Lay out your chicken or Quorn on a baking tray and cover it in the pesto. Don’t be afraid to get your hands dirty!
Next, it’s time to cut up the onion. Red tastes so much nicer in this dish but I always find it makes me cry more so if you can’t handle it, just use a white onion!
Once that’s cut, chuck it on top of the chicken and then pop the chicken in the oven- it should take around 25 minutes to cook but this all depends on the size of the piece of chicken. Make sure to check it’s cooked all the way through with no pink bits!
Now that’s done, it’s time to use the new toy! If you don’t have a spiraliser, you can also just cut up loads of courgette into small pieces. I’ve tried it before and it is more time consuming but saves pennies if you don’t want to buy a spiraliser.
The spiraliser is kind of like a glorified pencil sharpener but it gives you so much courgette to work with and once its all been successfully courgettied, chuck it in a frying pan with a little bit of oil and fry it off for a couple of minutes. (Make sure not to overcook or it’ll go soggy- you’re really just heating it up!)
Chuck in the cooked chicken and the olives and mix around. Then pop it in a bowl and voila! You’ve got a really yummy meal that’s insanely easy to make.
